What is dal bati churma?
Dal bati churma is three things eaten together. Bati is a hard baked wheat roll, dal is a lentil curry poured over it, and churma is crushed wheat cooked with ghee and sugar. You break the bati, soak it in dal, and take churma between bites as the sweet part.
Wikipedia's Dal bati article describes the dish as dal (lentils) with bati. It lists Rajasthan, Madhya Pradesh, Gujarat and parts of Maharashtra and Uttar Pradesh as places where it is popular. Its Churma article explains churma as coarsely ground wheat cooked with ghee and sugar.
Our plate has two kinds of bati. Mawa bati carries mawa, the milk solid used in Indian sweets, and masala bati carries spices. The dal on the thali is daal fry. For more on where to eat it, see our dal bati churma restaurant guide.
What are gatte and kadhi pakoda?
Gatta curry, written Gutta Curry on our menu, is a curry of gram flour dumplings. Kadhi pakoda is a tangy gravy of yogurt and besan with fried pakoras in it. Both dishes are built on besan, the gram flour that also goes into papad.
Wikipedia's Kadhi article says kadhi originated in Rajasthan. It is made by simmering yogurt with besan and spices until it thickens, sometimes with pakoras added. Eat kadhi pakoda with jeera rice, and gatta curry with roti or paratha.
The other two mains are paneer do pyaaza, paneer cooked with onion, and a seasonal vegetable that changes through the year.
What breads, sides and drink come with the thali?
The breads are makke ki roti, a flatbread made from maize flour, and lachha paratha, a layered wheat paratha. Jeera rice comes with them. The sides are lehsun ki chutney, mirchi ke tapore, raw mango pickle, moong dal papad, onion raita and onion salad.
Lehsun ki chutney is a garlic chutney and mirchi ke tapore is made with chillies, so taste a little before you mix them into the dal. The drink is dhungari hui chaach, smoked buttermilk. Wikipedia's Chaas article describes chaas as a curd-based drink popular across the Indian subcontinent.
Why is Rajasthani food mostly vegetarian staples like wheat and lentils?
Wikipedia's Rajasthani cuisine article says the cuisine was shaped by an arid land and its available ingredients. It also names the warlike lifestyle of the region and temple traditions such as Pushtimarg. Food that lasted several days and could be eaten without heating was preferred.
You can see wheat, lentils, gram flour and buttermilk across the plate. At Govindam Retreat every item is vegetarian, and Jain or no onion garlic plates are made on request with prior intimation.
